try pmwiki and moinmoin. pmwiki is php, easy to configure and manage
with many fine grain controls, extensible via recipes and has a very
active community. it also does not require a database, but can use
mysql through an extension.

moinmoin is python and supposed to be very easy to use, but I was
never able to get it to work for me.

mediawiki has a reputation to be hard to use and a beast in terms of
space and requirements. very capable but not user friendly.
