[Linux] Backup Concept / Utilization ?

Using rsync to make copies of our mail directory has saved us a few
times, and we accompilsh this with rsync and ssh, but as the directory
grows larger, and the files as well the amount of cpu involved in
transferring at times slows the system down.
Currently the cron job is located on the mail server and transfers the
information to the backup mail server, if we put the cron job on the
backup server, then I am guessing there will be less cpu useage on the
mail server itself since it would only handle the transfer aspect, and
not have to calculate which files etc.

Would this be a correct statement ? Would there be a  significant value
in this ?

Also if I wanted to apply the same backup concept to lets say the home
directory where we have all the domains we host it would be a much
larger scale ( gigabytes of data ) and rsync seems that if the update
was started, it would not complete before the next run of the update
executes meaning the system would be slowed greatly.  Any ideas on how
to better accomplish this ?
